An international food producer partnered with us to conduct a dairy beverage digital diary case study among frequent grocery shoppers who were current dairy milk users and open to purchasing dairy-based beverages in the future. The research was designed to understand beverage habits, dairy consumption routines, product typology preferences, and consumer response to new product ideas.
The study used a 7-day online bulletin board hosted through Forsta Digital Diaries. This digital diary research approach helped capture behaviour across a normal week instead of relying only on one-time recall. Participants completed daily activities, allowing the client to observe how dairy-based beverages fit into everyday consumption occasions, grocery planning, household routines, and category decision-making.
The Challenge
Dairy-based beverage choices are shaped by more than taste. For the client, the challenge was to understand the consumer insights behind habit, health perception, convenience, flavour expectation, nutritional relevance, household usage, and openness to new formats. A shopper may rely on dairy milk for routine needs but still consider other dairy-based beverages when the product offers a clear occasion, benefit, or emotional cue.
The client required insight into:
• Current beverage routines among frequent grocery shoppers.
• The role of dairy milk in household consumption and category behaviour.
• Triggers that influence openness to dairy-based beverage innovation.
• Consumer response to new product ideas in a diary-led environment.
• Differences in expectations and feedback across delighter and optimizer segments.
The study required category-relevant respondents, not broad grocery shoppers. Participants had to be dairy milk users, open to future dairy-based beverage purchases, and active enough in grocery shopping to comment on product choice, usage occasions, and category fit. Respondents were also classified into two product typology segments: delighters and optimizers, supporting stronger dairy consumer research.
What We Did
We designed a 7-day online bulletin board research program using Forsta Digital Diaries, giving participants structured activities to complete for approximately 30 minutes each day. The format allowed the research to capture everyday beverage decisions and category experiences as they occurred throughout the week.
The study included:
• Frequent grocery shoppers recruited across the United States.
• Current dairy milk users with openness to future dairy-based beverage purchases.
• Delighter and optimizer segments identified through product typology.
• 30 qualified participants invited to the online bulletin board.
• 29 respondents who completed the full 7-day activity.
• Daily activities focused on beverage habits, dairy routines, category perceptions, and product ideas.
• Forsta Digital Diaries used to host and manage the research.
• Fieldwork completed in November 2023.
The diary format allowed participants to respond in context, closer to actual consumption and shopping moments. This beverage consumption research captured day-to-day decisions, dairy usage patterns, product expectations, and reactions to new product ideas without relying on a single interview setting.
The Impact of the Research
The study gave the client a behaviour-led view of dairy-based beverage consideration among qualified grocery shoppers. It connected routine consumption, product typology, category openness, and concept feedback to show where new beverage opportunities could fit within everyday consumer needs.
